Cherry and Pineapple Salad
From Syd's Kitchen
1 envelop plain gelatin 1 lemon jello
grated rind and juice of lemon
grated rind and juice of orange
½ c sugar

¾ c chopped pecans
1 can sour pitted cherries
1 can crushed pineapple
¼ c cold water
red food coloring
|
1 Drain juice from fresh fruits into pan.
2 Add sugar and Jello and bring to boil.
3 Dissolve gelatin in ¼ c water, add to mix. Stir and cool.
4 Add cherries, pineapple, grated rinds, nuts, lemon and orange juice, coloring.
5 Pour into greased mold and refrigerate.
Tart fruit salad, serves 12.
