Fruit Cake Cookies From
Betty's Kitchen
1/2 cup butter
1cup brown sugar, dark
4 eggs, separated
3 tbsp milk
2 tsp baking soda, dissolved in milk
1 1/2 tsp salt
approx a cup of bourbon

1 lb candied cherries
1 lb candied pineapple
1 1/2 lb white raisins
1 lb dates
1 1/2 lb nuts (pecans good)

cups flour (set aside 1 of those cups to mix in fruit)

Chop up fruit and nuts, add one cup of the flour to mixture to keep from sticking together, set aside. Blend butter,
sugar, and add beaten egg yolks. Add bourbon. Add baking soda that has been dissolved in the milk, salt, and other two cups of flour. Stir.
Fold in beaten egg whites. Mix together both batches.
Drop tablespoon-sized on greased sheet, 20 min at 300 degrees.
Store in tight tins or Tupperware with bourbon cloth over or separated by wax paper, as they are very moist and will stick together. Make cookies size you wish, but not too big. Fruit
chopping is the only time consuming thing! Pro: they're good. Con: fruits and nuts are are expensive. Makes over 100.
