Roasted Pork Loin          From Syd's Kitchen
½ tsp salt
1 tbsp oregano or rosemary, or sage
1 tbsp olive oil
3 lb pork loin
pepper to taste






1.Place rack in oven center & preheat oven to 450°.
2.With about a tablespoon of olive oil in a saucer, add salt, pepper, dried oregano (or rosemary, sage or thyme) and mix.
3.Rub mixture into the pork roast. Place roast on rack in roasting pan, fat side up, and put in the 450° preheated oven.
4.This is the IMPORTANT part. Roast for 10 minutes, then RE-SET THE OVEN TEMPERATURE TO 250°.
5.Continue cooking for about 50-60 minutes or until the meat registers  150° on a meat thermometer.
6.Remove from oven, set on cutting board, cover with foil and let it rest for about 15 minutes before slicing. The temperature will continue to rise to about 155° as it rests. So moist and yummy, enjoy!
