Refrigerator Rolls                                 From Betzy's Kitchen
2 pkgs dry yeast
1 c warm water
1 c shortening
1 c sugar
2 eggs
6 c unsifted flour
1 tbsp salt
1 c boiling water


1 Pour yeast pkgs onto top of warm water in medium size bowl; set aside.
2 Cream shortening & sugar; add boiling water.
3 Beat eggs thoroughly.
4 Add shortening-sugar mix to eggs.
5 Add yeast.
6 Sift flour & salt into liquid and stir.

Leave in bowl in refrigerator overnight.
Knead mixture lightly 8 - 12 minutes on floured area. Roll out on floured surface and cut into large rounds with glass or cup. Double the round over, touch with melted butter, set close together on baking sheet. Allow to rise in fairly warm place for at least two hours. Bake 12 - 15 mins at 375° or until lightly browned. Will freeze nicely.
